So one night I decided to make myself a midnight snack of peanut butter toast and a bowl of fresh blueberries when it dawned on me that I could put some blueberries on the toast. When I took my first bite I realized that it tasted like a really fresh PB&J bite with less added sugar. It was unexpectedly delicious and refreshing.
However delicious, placing individual blueberries would be too much of a hassle and you don't want to be popping blueberry juice across the room with every bite so I thought "you know what? The same idea behind the avocado smash could be applied here. Why not blueberry smash?" So I took a bowl and smashed the little buggers until they popped their little white flesh into a nice jam-like consistency and spread it on like there was no tomorrow.
And for good measure I drizzled some of this great alfalfa honey I bought from the farmer's market just last week because why not?
- 2 large slices of nice bread
- 1 cup of fresh blueberries
- 4 tbsps of peanut butter (chunky or creamy. I used chunky)
- Some good ol' sweet honey
- Kosher salt
- Toast your bread as you like it.
- Spread a thick layer of peanut butter evenly on your toast (about 2 tbsps per slice).
- In a separate bowl, use a fork to smash your blueberries into a jam-like consistency (not too much).
- Spread the blueberry smash onto your peanut buttered toast.
- Drizzle a bit of honey all over the toast, to taste.
- Sprinkle a little bit of salt, to taste.
- Enjoy!
